Cynara Scolymus Perennial
This herbacious plant is grown for it's edible flower buds which can be harvested before the flower blooms. It's leaves are a silver-green color and can have a prickly texture.

Sow 4 to 6 feet apart due to the size of the plant. Seeds should be stratified by placing them in a freezer for a week or two before planting. This method causes the plant to produce stronger buds because it will have already survived cold temperatures. Best time to sow is early fall to allow it to establish before winter.
